Morning Life Hack: Overnight Oats
Written by: Allison Swan
Looking for a way to make your mornings feel a little less chaotic? The answer is overnight oats! This dish takes just minutes to prep with a handful of ingredients most already have at home. There's no cooking at all. The oats make themselves with an overnight rest in the fridge. I've tried plenty of recipes and this is by far the absolute best—it’s so good that I make it just about every week! Whip up this vegan recipe now to enjoy the next day:
1 cup almond milk
1 tablespoon chia seeds
¼ cup salted peanut butter
2 tablespoons maple syrup
1 teaspoon vanilla
1 cup rolled oats
1 tablespoon cocoa powder
Stir all ingredients together.
Divide between jars and place in the fridge overnight.
Get creative and garnish with fruit or chocolate.
I suggest substituting almond or cashew butter for peanut butter to switch up the flavor. If you’re wanting to cut back the fat and calories, try using a peanut butter powder—PB fit has 90% less fat than traditional peanut butter with 50 calories in two tablespoons versus 190 calories in traditional peanut butter.
