Between late summer and early fall is the best time of year to camp! Take your camping food to the next level with these easy recipes from Whole Foods that you can prep beforehand, wrap in parchment paper and foil, and place over the campfire coals or on the grill when you’re ready to eat. Here’s what to make for an upscale dinner:  

Herby-Lemon Salmon

Flaky, flavor-packed fish isn’t just a fancy entre enjoyed at home or when you’re eating out—it can be campfire food, too! Marinate wild salmon fillets in extra-virgin olive oil, lemon juice, a few chopped garlic cloves, and some Dijon mustard with whatever herbs you have on hand. Before sealing your foil packet, add a few slices of lemon and some extra-virgin olive oil.  

Estimated cooking time: 15-20 minutes

 

Veggie Medley

Fresh veggies prepared simply embody summertime cooking. Use whatever veggie combination you like—try zucchini, portobello mushrooms, and cherry tomatoes or onions, eggplant, cherry tomatoes, and basil. Add extra-virgin olive oil and season to taste. 

Estimated cooking time: 20 minutes

 

Tex-Mex Sweet Potatoes

Combine roughly chopped sweet potatoes with thinly sliced scallions and diced poblano and bell peppers. For the last minute while they cook, add a sprinkle of your favorite cheese. If you're going to make eggs for breakfast the next morning on your camping trip, mix them with your leftover Tex-Mex Sweet Potatoes to make a quick hash!

Estimated cooking time: 25 minutes

 

S’mores Burrito

Put your marshmallows, chocolate, and crumbled graham crackers in flour tortillas, roll them up, and wrap them in foil. While the classic s'more is amazing on its own, these burritos might just become your new summer tradition!

 

Remember to rotate each foil pack to or three times throughout the process to ensure even cooking. Enjoy your stress-free dinner and the great outdoors!
